Aronia Vinaigrette

This recipe won awards at an Iowa State University contest. Admittedly, Iowa doesn't have quite the reputation of, say, Paris, for fine dining—but any award is a good award. We'd even tout a blue ribbon from the Ozaukee County Fair, but they don't seem to have an entry for Balsamic Vinaigrette... yet.  

Ingredients

  • 1/2 cup aronia berries
  • 1/2 cup water
  • 1/4 cup vinegar
  • 2-3 teaspoons sugar                  
  • 1 teaspoon black pepper
  • Pinch of cumin
  • 1/4 teaspoon tamarind paste (not required)

PUREE 

Blend the berries only.

MIX

Mix everything together. Wisk a bit to form an emulsion.
